Ingredients

- 3 cups (12oz/340g) uncooked pasta (any small shape)
- 1 cup sliced dill pickles (reserve the pickle juice)
- ½ small yellow or white onion, diced
- 1 cup diced cheddar or Colby Jack cheese
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon pickle juice (reserved)
- Salt and pepper to taste
- Fresh dill (optional, for garnish)
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
- Slice pickles, dice onion, and cube the cheese.
- In a large bowl, mix mayonnaise, Dijon mustard, and pickle juice until smooth.
- Add cooled pasta, pickles, onion, and cheese to the dressing. Toss until evenly coated.
- Season with salt and pepper to taste. Optionally, add fresh dill for extra flavor.
- Refrigerate for at least 30 minutes before serving.
- Garnish with extra pickle slices or dill and enjoy!
Notes
For enhanced flavor, chill for a few hours before serving. Swap mayonnaise for Greek yogurt for a lighter version.
