Description

A tangy and creamy Dill Pickle Pasta Salad packed with crunchy pickles, cheese, and a zesty dressing—perfect for any gathering!


Ingredients

  • 3 cups (12oz/340g) uncooked pasta (any small shape)
  • 1 cup sliced dill pickles (reserve the pickle juice)
  • ½ small yellow or white onion, diced
  • 1 cup diced cheddar or Colby Jack cheese
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon pickle juice (reserved)
  • Salt and pepper to taste
  • Fresh dill (optional, for garnish)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Slice pickles, dice onion, and cube the cheese.
  3. In a large bowl, mix mayonnaise, Dijon mustard, and pickle juice until smooth.
  4. Add cooled pasta, pickles, onion, and cheese to the dressing. Toss until evenly coated.
  5. Season with salt and pepper to taste. Optionally, add fresh dill for extra flavor.
  6. Refrigerate for at least 30 minutes before serving.
  7. Garnish with extra pickle slices or dill and enjoy!

Notes

For enhanced flavor, chill for a few hours before serving. Swap mayonnaise for Greek yogurt for a lighter version.
