Ingredients

  • 2 cups cooked chicken breast, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. In a large mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, garlic powder, paprika, salt, and black pepper until smooth.
  2. Add the diced chicken, cucumber, cherry tomatoes, red onion, and chopped parsley to the bowl.
  3. Drizzle with olive oil and gently toss to combine.
  4. Taste and adjust seasoning as needed.
  5. Serve chilled or at room temperature.
