Ingredients

- 2 cups cooked chicken breast, diced
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 teaspoon olive oil
Instructions
- In a large mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, garlic powder, paprika, salt, and black pepper until smooth.
- Add the diced chicken, cucumber, cherry tomatoes, red onion, and chopped parsley to the bowl.
- Drizzle with olive oil and gently toss to combine.
- Taste and adjust seasoning as needed.
- Serve chilled or at room temperature.
