A refreshing, creamy cucumber salad with fresh dill and garlic, perfect for summer gatherings and BBQs.
Ingredients

- ½ cup sour cream or Greek yogurt
- 2 tablespoons distilled white vinegar
- 2 small cloves garlic, minced (about 1 teaspoon)
- ½ teaspoon granulated sugar or honey
- ¾ teaspoon salt
- 2 tablespoons fresh dill, chopped
- 2 English cucumbers (about 1 ½ pounds)
- ½ red or yellow onion, thinly sliced
Instructions
- In a medium bowl, whisk together sour cream or Greek yogurt, vinegar, minced garlic, sugar or honey, salt, and fresh dill until smooth.
- Wash and thinly slice the cucumbers (peeling optional). Place in a large bowl.
- Thinly slice the red or yellow onion and add to the cucumbers.
- Pour the creamy dressing over the cucumber and onion mixture. Toss gently until well coated.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
- Stir before serving and garnish with additional dill if desired.
Notes
For best texture, use English cucumbers. Allowing the salad to chill enhances the flavors! Add nuts or seeds for crunch, or swap dill for mint or parsley for a twist.
