Description

A wholesome and flavorful meal with juicy baked chicken, crispy baby potatoes, and fresh broccolini, all in one dish!


Ingredients

  • 4 chicken breasts (2 pounds total)
  • 1 ½ pounds (700g) baby potatoes, cut into ¾ inch pieces
  • 12 ounces (320g) broccolini or broccoli
  • 2 teaspoons olive oil
  • Salt and pepper, to taste
  • Optional: 1 teaspoon dried herbs (thyme, rosemary)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken breasts in a bowl, drizzle with olive oil, and season with salt, pepper, and optional dried herbs.
  3. Wash and cut baby potatoes, then toss with olive oil, salt, and pepper.
  4. Arrange chicken in the center of a baking dish and scatter potatoes around it.
  5. Bake for 25 minutes, then add broccolini and bake for another 15 minutes until chicken reaches 165°F (74°C) and potatoes are tender.
  6. For extra crispiness, broil for the last 2-3 minutes.
  7. Serve warm and enjoy!

Notes

Marinate chicken for 30 minutes before baking for extra flavor. Swap broccolini with asparagus or bell peppers for variety.
