- 4 chicken breasts (2 pounds total)
- 1 ½ pounds (700g) baby potatoes, cut into ¾ inch pieces
- 12 ounces (320g) broccolini or broccoli
- 2 teaspoons olive oil
- Salt and pepper, to taste
- Optional: 1 teaspoon dried herbs (thyme, rosemary)
Instructions
- Preheat oven to 400°F (200°C).
- Place chicken breasts in a bowl, drizzle with olive oil, and season with salt, pepper, and optional dried herbs.
- Wash and cut baby potatoes, then toss with olive oil, salt, and pepper.
- Arrange chicken in the center of a baking dish and scatter potatoes around it.
- Bake for 25 minutes, then add broccolini and bake for another 15 minutes until chicken reaches 165°F (74°C) and potatoes are tender.
- For extra crispiness, broil for the last 2-3 minutes.
- Serve warm and enjoy!
Notes
Marinate chicken for 30 minutes before baking for extra flavor. Swap broccolini with asparagus or bell peppers for variety.
